The Hype
I don't know about you but oats are a fall/winter breakfast essential for me! They are warm, comforting, and nutritious! But the best part about oats? You can prep them the night before and eat them on the go.
I am definitely one who skips breakfast all together if it means getting out of bed a few minutes early... so having breakfast ready for me to grab from the fridge solves all of my morning hunger.
Overnight oats are so versatile and can be made to fit any morning cravings. Sometimes I'm feeling chocolate, strawberries and cream, blueberry muffin, and (most often) peanut butter! I just throw in my favorite flavors and my oats always turn out delicious!

Nutritious and Delicious
There are several health benefits to eating oatmeal. Oats are nutrient dense and full of fiber, all while leaving your hunger satisfied.

The Recipe
Here is my current favorite overnight oat recipe that tastes just like a Reese's Peanut Butter Cup... but maybe even better (don't tell Hershey's)!

1/2 cup old fashioned oats
1/3 cup plain greek yogurt
1 tablespoon chia or flax seeds
1/2 teaspoon vanilla
2 tablespoons natural peanut butter
2 tablespoons unsweetened cocoa powder
Pinch of salt
0-2 tablespoons honey or pure maple syrup
Mix all ingredients together, spoon the mixture into a jar or sealed container, and let refrigerate for 2-4 hours (or overnight).
Take the oats out of the fridge, top with whatever you would like and enjoy them cold or warmed in the microwave!
