Softest Pumpkin Chocolate Chip Cookies

I love pumpkin just as much as the next girl when it starts getting cold outside... So let me feed your addiction (literally) and give you my FAVORITE pumpkin chocolate chip cookie recipe. They are #soft, they are #chewy, and they are #chocolatey. You will never make another cookie after trying these! (Just look at them!)

Cookie Claim to Fame

If you know GREAT pumpkin chocolate chip cookies then you know Provo Bakery's pumpkin chocolate chip cookies. They are just the BEST.


I don't even exaggerate when I tell you these cookies changed my life! So of course I had to learn how to make them myself.


These cookies taste just like Provo Bakery's but maybe even better because I can make them anytime I want! I. am. obsessed.


So let's get into the recipe!

Recipe:

  • 1 cup canned pumpkin

  • 1 cup sugar

  • 1/2 cup vegetable oil

  • 1 egg

  • 2 cups flour

  • 2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon milk

  • 1 tablespoon vanilla

  • 2 cups semisweet chocolate chips

Some of my favorite optional mix-ins include:

  • chopped pecans

  • chopped dark chocolate bar

But get creative with the mix-ins and make them just the way you like!


Instructions:

Combine pumpkin, sugar, oil, and egg. Dissolve the baking soda in the milk and mix in. In a separate bowl, stir together flour, baking soda, baking powder, cinnamon, and salt. Add to the pumpkin mixture. Stir in vanilla and chocolate chips. Drop by spoonfuls on greased cookie sheet. Bake at 350 degrees for 10 minutes or until firm. Enjoy!

Get Creative:

These cookies would also be great topped with maple or cream cheese frosting! I like them just how they are but this recipe is super customizable to fit your taste!
